TOMATO & MOZZARELLA GNOCCHI
Gnocchi are delicious alternative to pasta and can be served with any sauce. This classic gnocchi alla Sorrentina are a very quick way to have most satisfying family lunch.
Ingredients

potato gnocchi 500g (2 packs)

onion half

garlic 1/2 gloves

chopped tinned tomatoes 1 tin

tomato concentrate 15g

mozzarella 250g

fresh basil leaves a handful

olive oil 3 tbsp

salt 10g

pepper 1g

Method
Tip
Invest into a good quality tomato passata, otherwise, your dish might be acidic.

Chop half an onion, half garlic gloves and saute' in a frying pan in a little bit of olive oil until translucent. Add chopped tomatoes, tomato concentrate, a little bit of water, basil leaves, salt and pepper. Cook on low heat for 15-20min.

Pre-heat the oven to 180-200C and cut mozzarella in cubes. Arrange gnocchi into a large ovenproof dish, cover with tomato sauce and scatter mozzarella pieces. No need to pre-cook gnocchi as our gnocchi are very soft and will cook in the oven.

Bake for about 20min.

Serve with a sprinkle of Parmiggiano Reggiano.
